The French peasant dish gone Michelin star

Stuffed courgette flowers, one of the Mediterranean’s oldest and humblest dishes, are now served at Michelin-star restaurants on the most dazzling terraces of 's Cote d'Azur. At Restaurant Alain Llorca, this signature delicacy highlights other flavours from the South of : the singular, creamy ewe's milk cheese aged for months before being blended with locally grown aubergine, basil and olives – all with the sole purpose of exciting and enchanting diners. No one knows for sure when or how locals started eating courgette flowers, but their simple philosophy endures: when life gives you courgettes, make courgette blossoms.
